Life Edit Energy Balls (Adult and Kid version)

Hey Y’all! I teamed up with Kassia from @infusedholistickitchen to create the perfect snack. An energy ball with a healthy balance of good fat, protein, and low sugar. For the adults, we focused on creating a paleo friendly ball full of antioxidants, protein, superfoods, and healthy fats for sustained energy throughout the day. For the kids, we wanted to provide a snack that was allergy-free and low in sugar but still tasted yummy. I hope you enjoy!

Energy Ball

Ingredients

1/4 cup tigernut flour (Naturally gluten-free and Paleo. A prebiotic fiber that supports a healthy immune system and is hight in iron, potassium, protein, magnesium, zinc and vitamins E and C)

5 tbsp almond butter

4 Dates pitted

1 tbsp cacao powder

3 scopes of collagen powder (I used Vital Proteins)

1/2 tsp acerola powder

2 tsp chia seeds

1/4 tsp pink salt

1/4 tsp cinnamon

1/8 tsp vanilla

1/2 tsp coconut oil

Topping options: coconut flakes, bee pollen, cacao nibs, or cocoa powder.

Place all your ingredients in a food processor and pulse until sticky consistency. Roll into small balls and if you prefer more flavor you can roll in your favorite choice of topping.

Yields 9 balls (6g Fat, 6g Protein, and 10g Carbs (1.2 g sugar)

Kids Energy Ball

Ingredients

1/2 cup Gluten-free Oats

1/4 cup sunflower butter

1/2 cup raisins

2 pitted dates

1/2 tbsp chia seeds

1/8 tsp pink salt

1/4 tsp vanilla

2 tbsp mini semi-sweet chocolate chips (enjoy life)

2 tbsp chocolate protein powder (optional)

Place all your ingredients in a food processor and pulse until sticky consistency. Roll into small balls. 

Yields 10 balls
